How to colour fondant icing

Step one
Put the first amount of colour onto the fondant(sugarpaste) . The amount you put in depends on the colour you want I usually put in1 teaspoon at a time for dark colours and 1/4 teaspoon at a time for pale colours, they need to be added slowly so they blend into the icing well.
Note: The best colours to use for this are the Chefmaster gel colour or Sugarflair gel colour.

Step two
Spray bench with cooking spray or cornflour (I like to use Sunfield canola spray with no added water. Which is readily available at the supermarket)

How to ice a cake with fondant

Fruit Cakes
Note- For the icing of Fruit Cakes. Follow the same techniques below, but cover your cake with an apricot glaze(apricot jam heated with a little water and sieved) instead of ganache. This will stick the almond icing to the cake. Do not refrigerate beforehand. Then use apricot glaze again to stick the white icing to the almond.

Step one
Level your cake and secure cake to board with royal icing. Spread gancahe or flavoured butter icing over cake and refrigerate for 15min.
